Lines don't lie
This is a must-go PDX food cart, based on my 20+ years of eating at carts here. If long lines are a problem for you, then show up at 11 or 2. The noodles are excellent and the sauces are fresh, tasty and solid. Eat these noodles hot (temperature) but keep in mind that their spice scale skews high ("medium" is spicier than most of my colleagues can handle).

Not impressed
Disappointed with the texture and flavor. Same flavor for different noodles. Instead of focusing on the fresh stretch, should focus of improving the flavor. Fill the stomach but doesn’t satisfy the taste bud.

Great taste, Huge portion
We have our summer home in Portland and got to know this food cart for the past two years. We have been here and have taken out of town guests about 8-10 times. Each time, the food has been great. Excellent price point and just gorgeous hand-pulled noodles with expertly prepared sauces/broth. Oh, the portion is HUGE. Two people can easily enjoy one order! We tend to order one for each and typically have to give the rest to others in the neighborhood!

No DOUBT - the best hand pulled noodles in Portland
We have been going here since last summer. Today, we stopped by again and they have the summer Noodles Salad with Chicken... Well, we ordered it and our standard... Beef noodles stir-fry... The Noodles Salad with chicken came with a HUGE container full of goodness. Perfectly chewy noodles, crunchy bean sprout, salad, baby spinach and just gorgeous grilled chicken.... Did I mention the portion is HUGE? We could not finish either of our order.... Well, another good left-over from Stretch the Noodle... The owners are so kind and she is particularly very polite in handling your order and handing you the food. BTW - the price point is ridiculous for quality and portion - ranging from $ 9 to $ 11. Run here!

Great handmade noodles. Legit Sichuan taste. Huge portion
One of the best food carts in Portland, OR (or anywhere!). The noodles and offerings are legit. If you come early, you will likely see the owner slinging dough to make noodles. Only a few choices but each is absolutely superb. This time, we had the La Mian and the Chao Mian (La Mian is basically a Sichuan style of beef soup with vegetables and the Chao Mian is a lomein style stir fried noodles dish). Both are superb - gorgeous sauced, perfectly chewy noodles and each costs $ 9!. The Mian is HUGE. Unless you are really, really hungry, the portion is more than enough for two. The soup is wonderfully fragrant and the beef is braised soft and melt to your mouth. Just a great truck. Now, the bad news - be prepared to wait for a while if you have 6-7 people ahead of you... For this case, it will be 15-20 minutes as they make everything to order.
