Lynne Curry is an Oregon food writer, blogger, private chef and Ask Oregon Expert. Her cookbook, “Pure Beef: An Essential Guide to Artisan Meat With Recipes for Every Cut,” was published in May and has received praise from the Washington Post, Los Angeles Times and American Grassfed Association. (Curry says her favorite media attention was being interviewed by the Chicago Tribune about grilling for Father’s Day.) Curry fielded our questions about beef, burgers and living in her home on the range in Joseph (pop. 1,054).
What is it like living in such a small town?
It’s like a little Portland neighborhood with fewer people.
You’ve written an entire cookbook about beef, so we know you are selective. Where do get your beef?
I get my beef from a couple that raises cattle out on the Zumwalt Prairie. (These historic grasslands are managed for restoration by the Nature Conservancy. Curry says it’s important to address how grazing can be part of habitat restoration.)
You are a former vegetarian. How did you start eating meat?
Until I came here, I was not a meat eater. It came from being a locavore and eating from my foodshed.
What’s your favorite burger?
There is a fast food joint on the way out of town called the Little Bear Drive In. I can get a grassfed burger from Carman Ranch. I love that when I’m hitting the road I can get road food.
What is the secret to a perfect steak?
I like to take a flat iron steak. Salt, sear, cook to medium rare and slice it over a huge arugula salad dressed with a light sherry vinaigrette.
Do you have a favorite Oregon beverage?
I sure do love Domaine Drouhin Pinot Noir when I can get my hands on it!
What are you looking forward to in the fall?
Great cider pressing parties that happen out here. We’ll have big community potlucks and hand-cranked cider. I also love getting out on the trail to see the spectacular turn of bright golden tamaracks just 10 minutes from my door.
