Completely unacceptable
It was the worst dining experience of my life, bar none. The wait staff was rude. The service was slow. They “forgot” my house salad. I ordered a filet mignon medium rare. When it finally did arrive, it was well done and cold, much like our server. The crispy potatoes were beyond crispy. They were burned. I gave my dinner to my dogs. My wife and I are in disbelief regarding how we were treated. We will never go back to Castor again.

Good Food, Pleasant but Glacial Service
We visited Castor five years ago and really enjoyed our meal. Unfortunately, our experience this time did not match the previous one. Castor is an attractive restaurant with a nice Old World kind of ambiance. The lunch menu has a good selection of interesting and tasty items, such as sandwiches, salads, Mac and cheese, steak frites. The kitchen was accommodating, making a special dish for a patron with a limited palette. The problem, however, is the service doesn’t match the atmosphere or the food. The staff was pleasant but inattentive. Even though there were patrons at only a handful of tables, we waited half an hour for a server to come take our meal order and another half an hour for the food to arrive. And the server twice spilled on the table. Unacceptable for a place that bills itself as on the elegant side.

Beautiful restaurant
We tried this restaurant and were very impressed with everything from the decor & service to the delicious food. Our waiter was very friendly and took extra care when we mentioned our son had a nut allergy. I tried the scallops which were great, but I also tried a bit of my husband's pork chop - it was amazing!

Downtown Dining Option
Nice dining spot in downtown Corvallis. Probably one of the few nice dining (though casual) spots with a rotating seasonal menu. Make reservations. Good wine list. Prices were in line for what you would expect. Staff was friendly and helpful. Had the Oregon Salmon entree - was good, though a tad overcooked. Husband ordered the filet entree - asked for it medium rare and it came almost well done - so that he sent back - and it did come back more medium than medium rate. So while both dishes were not cooked exactly as ordered, they were very tasty.

Castor--One Of Only A Few in Corvallis
As we were unfamiliar with restaurants in Corvallis we looked up a few and decided on Castor. No reservation though, but were seated at the bar. Lauren, the bartender, was a master of mixology and fascinating to watch her prepare the drinks. I ordered the tuna seafood special, my wife had a house salad. Although we waited a while for the entrees once they arrived I thought so far so good. My tuna was well done on a bed of pasta. My wife's salad was so-so, nothing special at all. But in the end we were satisfied.
