Downtown Dining Option
Nice dining spot in downtown Corvallis. Probably one of the few nice dining (though casual) spots with a rotating seasonal menu. Make reservations. Good wine list. Prices were in line for what you would expect. Staff was friendly and helpful. Had the Oregon Salmon entree - was good, though a tad overcooked. Husband ordered the filet entree - asked for it medium rare and it came almost well done - so that he sent back - and it did come back more medium than medium rate. So while both dishes were not cooked exactly as ordered, they were very tasty.

Castor--One Of Only A Few in Corvallis
As we were unfamiliar with restaurants in Corvallis we looked up a few and decided on Castor. No reservation though, but were seated at the bar. Lauren, the bartender, was a master of mixology and fascinating to watch her prepare the drinks. I ordered the tuna seafood special, my wife had a house salad. Although we waited a while for the entrees once they arrived I thought so far so good. My tuna was well done on a bed of pasta. My wife's salad was so-so, nothing special at all. But in the end we were satisfied.

A bit disappointing
We dined at Castor after a long day of travel. My wife and I both ordered the "fillet". While tasty, the cut was clearly a commercial, precut individual sliced portion; and not well trimmed. The accompanying smashed potatoes were very tasty, as was the asparagus. We asked for some bread and butter to munch on before dinner. We received a plate with four small, thin pieces of grilled baguette with some very salty butter, for which they charged $5.00. Not impressed. The bar service was very slow, even though there were not many people when we arrived. For my money, there are better options to be had in Corvallis.

Excellent dinner.
Castor is one of our favorites in Corvallis. The ambience is classy, and the service is excellent. The cocktails are innovative and there are several local spirits options. We had shrimp cocktail and bread to start, shrimp perfectly cooked, not overdone. Great medium rare steak with Rogue Bleu cheese and perfectly cooked salmon. Great meal and great restaurant that supported their staff during the worst of the pandemic. We plan on returning soon!

Favorite place in town
Always warm, friendly inviting and knowledgeable. Kitchen staff, bar staff and entire operation are fantastic. My only regret is we can't visit more often. Very fortunate to have this in town, and look forward to the next seasons menu.
