Castor focuses on local, organic and sustainably harvested and foraged products. They thoughtfully craft their menu to reflect the seasons and the moods they evoke. Expect refreshment in the spring and summer, warmth and comfort in the fall and winter.
Castor is one of our favorites in Corvallis. The ambience is classy, and the service is excellent. The cocktails are innovative and there are several local spirits options. We had shrimp cocktail and bread to start, shrimp perfectly cooked, not overdone. Great medium rare steak with Rogue Bleu cheese and perfectly cooked salmon. Great meal and great restaurant that supported their staff during the worst of the pandemic. We plan on returning soon!
Favorite place in town
Always warm, friendly inviting and knowledgeable. Kitchen staff, bar staff and entire operation are fantastic. My only regret is we can't visit more often. Very fortunate to have this in town, and look forward to the next seasons menu.
Take-out done deliciously right
What with all the social distancing stuff, we decided to order take-out from Castor. Chose their "Family meal" which is food for two. Friday, that offer is Beef Tenderloin roast, mashed potatoes, braised greens, salad and some cookies. We ordered in advance, online; scheduled the pick up and came by the alley along the East side of their location expecting to find everything ready to go. Nope: They actually "served" our meal into the takeout containers AFTER we arrived. Hot things were still hot 15 minutes later when we got home, and the salad was still crisp and cool. The salad, their "house" version was excellent fresh local greens, shaved carrots, toasted hazelnuts and a vinaigrette that's as good as I've ever had. The mashed potatoes were lumpy and delicious. The braised greens were chewy... and delicious. And the roast was... perfect. I liked the cookies too, but compared to the rest of the meal, they weren't quite as special. We'll be back!
Ordered the cornbread panzanella salad. Too bad that the cornbread was so dry it broke into small crumbles that were hard to eat. You would think they would have left them a bit soft to also absorb some of the dressing. I also ordered the “tomato soup” based on a recommendation from the guy sitting next to me. The texture was like chili and it was really bland. Tried some salt and that didn’t help either to perk up up the chunks of tomato, ground beef and carrots. Try some spices next time chef. Staff were extremely busy to the point of fast stomp walking and looking away from you. I will not go back.
We hired the back room of this restaurant, and they provided us with good service and a nice atmosphere. The food was a little hit and miss. The canopies were all nice, especially the devilled eggs. The starter of french onion soup, tasted a little strange, like it had been over seasoned. The fillet steak was good, and the moon pie was tasty. Drinks service was good, and we were impressed with the restaurant overall.
