Our go-to breakfast place on Interstate 5
We always stop here for breakfast on our way back to Sacramento after we visit family in Olympia. We’ve never had a bad meal. Omelettes, pancakes everything is delicious. Service is amazingly fast. I ordered the fruit side and the choice included kiwi. Muffins are great. The herbal tea is an upscale brand and the server brought more hot water promptly, offered another tea bag if I needed it. Love the kitschy decor.

Best breakfast in town
We had excellent food and service. We really enjoyed the biscuit and gravy, pancakes, and scrambles. Also, “linkon” is two bacon and two sausage links. Great idea!!

Sybil’s talented serving team works together beautifully to make everyone feel at home
Tip of the cap to all the wonderful servers at Sybil’s Omelettes in Salem. They work together in a beautifully coordinated fashion to make customers feel taken care of and like a “member of the family.” I’ve never seen such a huge and diverse list of omelette options - 110, to be exact! This clearly is what the restaurant is known for and why it was packed with locals, including a couple large groups, on a random Thursday morning in late April. My cousin, who lives nearby, went with his “usual” omelette and wolfed it down with enthusiasm. He paired it with a homemade chocolate muffin that looked scrumptious. I built a breakfast from the “senior’s menu” with scrambled eggs, a smaller serving of hashbrowns and a homemade biscuit and was very pleased with my choice (and still quite stuffed.) Three cheers for the team at Sybil’s - I hope to come back on my next visit!

Simply Good.
I love a place with decent coffee served in thick mugs. I'm not an omelette fan, but my brother is. He had one with cheddar cheese and some kind of Portuguese sausage that he said was similar to kielbasa. He also said the omelette was great. I enjoyed my belgian waffle. The service was friendly and attentive.
