When they first started in the buffalo business, it was because they were intrigued with the animals. Little did they know what a great importance the buffalo meat would play in their lives. The recovery of the buffalo is an old story, but contrary to a lot of public opinion, the buffalo is no longer a rare and fragile national treasure. Rather, it is a flourishing breed that is becoming a regionally popular food source – the only wild animal in the U.S. being pastured as a food animal.
