Day 1: Meditate and Savor Plant-Forward Flavors

Your wellness retreat will start the moment you check in to the high-ceilinged lobby at SCP Redmond Hotel. This pet-friendly property is housed in a 1927 red-brick building that was carefully remodeled to suit modern tastes and ideas, relying heavily on sustainable — and, when possible, locally sourced — materials. 

In the hotel’s name, SCP stands for Soul, Community, Planet. This ethos extends to the hotel’s four food-and-beverage outlets, where ingredients are sourced from as nearby as the rooftop herb garden, and food waste is composted on site. With so many dining options to choose from, you can start and end your days in Redmond with satisfying and sustainable meals right outside your hotel room door. 

Speaking of hotel rooms, you can expect a soothing aesthetic in your private quarters. Decor such as Himalayan-salt lamps cast a rosy glow, tiny green plants adorn planters made of natural materials, and tables fashioned from upcycled stumps and live-edge slabs create a welcoming space. If you’re after a digital detox, book one of the Peaceful Rooms, designed without TVs, clocks or any other blue light-emitting devices and with added amenities such as yoga mats, essential oil diffusers and white noise machines for maximum relaxation potential.

After you’ve settled in, grab your water bottle and head down to the refilling station on the ground floor to fill up on freshly filtered water. If you don’t have a bottle, no problem: Each room comes with an oversize Mason jar for you to use during your stay. Then head over to SCP’s dedicated Meditation Room, where you can clear your mind in silence or thumb through a book from the hotel’s curated library.

Next, take advantage of Central Oregon’s famously sunny weather with a stroll through Redmond’s central business district, located just steps from the hotel’s front door. Hunt for treasures at Atomic Bazaar Vintage or shop for women’s clothing, accessories, and gifts at woman-owned Desert Prairie, then check out Redmond’s new mural off of Evergreen Ave between SW 5th and SW 6th street. Created by artists Katie Daisy and Karen Eland as part of the Central Oregon Mural Trail, it’s a celebration of high desert flora (and the perfect backdrop for a vacation snapshot).  

Wrap up your evening with a meal at Wayfarer Club, a relaxed, tavern-style bar with an inventive menu of cocktails and handcrafted non-alcoholic alternatives paired with modern takes on classic pub fare: Think tangy jackfruit tacos and mushroom-quinoa burgers topped with caramelized onion and red-pepper jam. You can even DIY your own antipasto plate by choosing from a variety of snacks, from marinated olives to pickled vegetables to a French Prairie Brie made in the Tualatin Valley. After dinner head back to your room to rest up for a day of dining and outdoor adventure.

Day 2: Climb, Hike and Sip Botanical Cocktails

Start your morning off at Provisions Market on the lobby level, where you can fuel up on energizing espresso drinks using beans supplied by Bend’s Backporch Coffee Roasters, and hearty breakfast treats such as cinnamon-vanilla French toast made with Sisters Bakery sourdough. While you’re waiting for your meal, take a moment to browse the locally-made home goods, snacks and art for sale in the same space. 

After breakfast make your way over to Smith Rock State Park, celebrated for its ample rock-climbing routes and extensive network of mountain-biking and rock-climbing trails. It’s also a great place for bird-watching, and the park provides refuge to a substantial population of golden eagles and prairie falcons. As such, some areas are closed from January through July so that these resident raptors can nest peacefully, but restrictions are always well signposted.The park is especially lovely to visit in the fall and winter since it’s cooler and decked out in colorful foliage.

For lunch, pop back to Provisions Market to pick up a few plant-forward treats — the grilled cheese made with cheddar sourced from Windy Acres Dairy Farm in nearby Prineville is a particularly good choice. Grab everything to go and head up to The Cove Palisades State Park for a picnic on the banks of the Deschutes River. 

The Rooftop

Make sure you get back to SCP in time to enjoy a sunset drink at the aptly named The Rooftop, the only rooftop bar in Redmond. Grab a plush seat among the planter boxes that line the space — which are used to grow herbal ingredients for house-made craft cocktails — while you take in views of the Cascade mountains. Then head downstairs to the sit-down Terra Kitchen, an intimate, plant-filled space celebrated for its colorful, creatively plated, vegetable-rich dishes. 

A plant-forward powerhouse and crown jewel among the dining outlets at the property, Terra Kitchen looks to local suppliers like Fields Farm in Bend and Sungrounded Farm in Terrebonne to showcase the seasonal bounty of Central Oregon while also keeping its carbon footprint low. Choose from a variety of salads, bowls and pasta dishes, and make sure you try some of the chef’s own grilled rye sourdough, served with a healthy dollop of tarragon-infused roasted-garlic puree. Finish it all off with a seasonally inspired dessert before retiring to the quiet of your room for a final night of restful sleep.
