EVOO has a simple, straight forward philosophy when it comes to food. A few simple rules serve as their guidelines for the home cook or the professional. Learn the cooking basics, and cook in the seasons, utilizing the freshest and most flavorful local ingredients. EVOO believes the basic kitchen “wardrobe” is important, too. A good knife or two, a cutting board and great cookware will increase the cook’s enjoyment and satisfaction. Sure there is a certain amount of satisfaction when cooking around a campfire, with only a pot, a spoon and a twig, because everything tastes good on a camping trip, but nobody would want to do that everyday. The space at EVOO offers a well-dressed kitchen that promises to enhance the student’s cooking experience and further demonstrate the concept of “right tool for the job.”

EVOO, A FUN EXPERIENCE IF YOU CAN AFFORD IT
This was truly a one of a time experience. We were treated with three entrees and a dessert over a three hour span, along with three wine pairings. Our host couple were very engaging, friendly, and funny. We really enjoyed the unusual and complex dishes. Bob the chef was very good about checking in with us often. To be honest, we were overwhelmed with the amount of food in each course. By the third entree, we were so full that it was hard to enjoy it, and we left food on our plates each time. For the dessert, we still powered on, even though we were so full. This was an awesome experience for us. However, there are a few things that could be improved upon. First off, Lenore, Bob’s wife, is very soft spoken. She used a microphone about half the time. When she didn’t use it we could not hear her, as we were placed away from the main seating area. The three hour time span was very long. We could barely move when we finally got up to leave! And $180 per person is quite unrealistic for most people. I understand that there is a lot involved in this, but three entrees? They could do two instead and charge less, and make it two hours or so instead. My final comment is about the center-cut filet in the last entree. The whole dish was divine, but the filet was raw in the center. The chef watched me cut into into it and said, perfect! Um not. I could only eat the outside edges.
